Spaghetti Squash With Tomatoes and Basil


Have you ever tried spaghetti squash? If not you don’t know what you are missing!!! You can use it in place for pasta in most recipes. This is one of my favorite ways to enjoy it!


Spaghetti Squash With Tomatoes and Basil

Makes 2 servings, double for 4

1 spaghetti squash

8 tomatoes, quartered (used Campari Tomatoes)

8 basil leave, washed and shredded

sea salt and pepper

Crunch Topping, recipe below, optional


Cut spaghetti squash length wise and remove seeds. You can cook your squash at 375 for 30 to 40 minutes, microwave it for about 8 minutes, or boil it until tender. After cooking your squash let it sit a couple of minutes until you can handle it. With a fork scrap out the insides of the squash and into a bowl or plate. Top with tomatoes, basil, seasonings, and optional crunch topping. Enjoy!!


Optional Crunchy Topping

1/2 tsp granulated garlic

2 TBSP unhulled sesame seeds

1/2c hemp seeds


Mix all ingredients together.
