Beet and Carrot Salad

 

Craving beets and carrots I whipped up this salad. Maybe it was the thinning of the beets and carrots in the garden that got me craving them. You can make this salad as big or small as you want and customize it to your tastes. This is just a quick guideline of what I used to make this salad. When I made it I had no intention of posting it but my husband thought it was too nice looking not to take a picture of and post.

 

Beet and Carrot Salad

Makes 1 serving

a few handfuls of bibb lettuce torn into pieces

3 beets, cooked, cooled, and skins removed, sliced

1/2-3/4c shredded carrots

2TBSP finely chopped red onion

sea salt and fresh ground pepper to taste

drizzle of hemp or olive oil, optional ( I will sometimes add this when I make this salad without lettuce tossing together beets and carrots)

 

Plate bibb lettuce. Mix together red onion and carrots and place in the center of the lettuce. To make it rounded like in the picture I just flipped the small glass bowl I mixed them together in. Place the sliced beets around the carrots and season with sea salt and pepper. Enjoy!

 

Beet and Carrot Salad
