So it’s my birthday and again I am going to have my cake, and eat it to, for breakfast!! Last year I posted a Birthday No Cake Shake , which I was going to have this morning but I decided to change it up a little and have fun. I may or may not also be debating on Banana Birthday Bites, another favorite not only for birthdays. So back to the Birthday No Cake Overnight Protein Oats…. they are delicious and easy, not to mention healthy. So go ahead even if it isn’t your birthday have a very happy un-birthday and enjoy some Birthday No Cake Overnight Protein Oats, sprinkles not optional!
Birthday No Cake Overnight Protein Oats
Makes 1 serving
1 1/4 c cashew, almond, or non dairy milk of choice (used So Delicious Unsweetened Almond Milk Plus also delicious with So Delicious Unsweetened Cashew Milk)
1/2 c oats, used gluten free
1 TBSP chia seeds
1/4 tsp pure almond extract
1 scoop vanilla protein powder (used Vega Protein Smoothie Viva Vanilla, also delicious with Vega Performance Protein, Vanilla)
Coconut Whipped Cream, see below
sprinkles!
*If you want more chia seeds you can also do a ratio of 1/3 cup oats and 2 Tablespoons chia seeds.
In a Vitamix, or blender, blend milk, protein powder, and almond extract until smooth. You can also mix this in a shaker cup if you want as well I just whipped it up before making a smoothie the night before and it makes sure there aren’t any clumps. In a jar or bowl mix together oats and chia seeds and stir in milk protein mixture. Set in the refrigerator overnight of for a couple of hours to thicken. Remove from the refrigerator, top with some Coconut Whipped Cream and sprinkles! Enjoy!
Coconut Whipped Cream
1 can coconut milk, full fat not light or So Delicious Culinary Original Coconut Milk Box
sweetener to taste, not liquid sweeteners (I use a little Stevia In The Raw)
1 tsp vanilla, optional
Place can or box of coconut milk in the refrigerator overnight to thicken. If using the can open and remove just the thick white and not the watery liquid. With the new So Delicious Coconut Milk boxes I find there isn’t any of the liquid and I use the whole box, love it! Place the thickened solid coconut milk in a bowl and whip until thick and creamy add sweetener to taste and vanilla. Best served immediately. Enjoy!

Thank you! Yes after a whole day in the car I am finally getting my cake. The girls didn’t have time to make one since we got home so late so they picked me up a Vegan Cocoa Mousse Cake from Whole Foods. 🙂
