Banana Birthday Bites

About a month ago my girls came to me after dinner asking if they could have cupcakes for dessert. There wasn’t enough time to make cupcakes. So I looked around trying to come up with a healthy little treat that I could make in a short amount of time and came up with these, minus the sprinkles.

So for my birthday since I already had an over the top cake I made for a friend’s house the weekend prior I decided to have these for my birthday instead. They are just as cute as cupcakes and guilt free! Of course at my age birthdays are more for my girls. Telling them I wasn’t having a cake they were upset and I brought up these cute little banana bites and my oldest said “with SPRINKLES” and I thought yep with sprinkles. They are happy they get something fun and to celebrate and I am happy I won’t over indulge in cake and have a tummy ache.

 

 

All you need to make these cute little Banana Birthday Bites are:

Bananas

Peanut Butter (used Peanut Butter & Co Smooth Operator)

Chocolate Peanut Butter (used Peanut Butter & Co Dark Chocolate Dreams)

SPRINKLES!!

 

Cut your banana into little chunks, however tall you would like your banana “cake” bites. Place the bananas on a wax paper covered plate or pan. Put your peanut butter into frosting bags or use a plastic bag and snip the corner. Pipe your peanut butter “frosting” onto each banana slice. Once you have piped peanut butter onto all of your banana slices sprinkle them with SPRINKLES! Place in the freezer to set, this is how I like them, or eat them right away. If you are making them ahead of time make sure to pull them out of the freezer about 10 minutes prior to serving. Your kids, and you, will love these cute little cupcake looking Banana Birthday Bites!
