The moment is here a recipe I’ve teased you with for probably a month now as I’ve made a dozen or so batches of these Vegan 4 Ingredient Protein Brownie Bites (gluten free and grain free too!) and posted them on Instagram stories and talked about them. I couldn’t share them until the new WholeMe flavor was released last week as that was one of our favorite ways to enjoy them and not thinking I included them in when I took photographs planning to share that version later but they were in so many photos so I had to hold off or reshoot them. The family wants to eat them as quick as I make them so that is a lot harder than it sounds.

There are so many reasons to love these little bites; they are chocolate, mini (which is always cuter), and a hit. Besides being delicious they are so easy to make and only require 4 ingredients! Yes 4, well 5 if you include toppings which are optional! They remind me of one of the first recipes I posted that I posted almost 4 years ago Chocolate Chip Banana Oatmeal Bites. Only so much easier and with less ingredients. So the 4 ingredients, bananas, nut butter, coconut flour, and Vega Clean Protein (or Sport) or cacao powder. That simple and I bet many have all of the ingredients if not 3 out of the 4 in their kitchen right now. So they are vegan, gluten free, and grain free. We love them for a quick breakfast, school or after school snack, after soccer and gymnastics, or a quick dessert.

Here is the only “odd” thing. I made them raw as balls and not crazy about them so I baked them and while they were good we like them best chilled and eat them straight out of the fridge. Not sure why, maybe because they are fudgier, hold together better, or are less dry out of the fridge? After we thought some more it’s like a chocolate chip cookie, they are great warm but there is just something about a chewy cookie after it’s cooled and they tastes and textures don’t compare. I can’t tell you for certain because as hard as I try to figure it out we eat them as quick as I make them. Oh maybe not quite as quick because really they take 20-25 minutes maybe to make and bake, sometimes I wait for the oven to warm up and they are ready to go in. So that’s how I’m going to recommend they are enjoyed, chilled.

I really don’t have much more to say, I’m still feeling under the weather (so not use to being sick and I just don’t want to rest but finally I just had to and it’s so hard for me) and sitting here trying to figure out what to say since I held off writing this post but decided to whip it up to get it to you today so I hope the photos speak for themselves.

Vegan 4 Ingredient Protein Brownie Bites
Makes 16-20 bites
1c banana puree, or well mashed ripe banana (about 3 medium)
1/2c almond butter, or peanut butter (we’ve used Peanut Butter & Co Smooth Operator, Buddy’s Peanut Butter, Wild Friends Almond Butter and Vanilla Espresso Almond Butter, and fresh homemade almond butter)
1/4c coconut flour, spoon don’t pack (Trader Joe’s)
1/2c Vega Clean Chocolate Protein, or cacao powder* (Navitas Naturals Cacao Powder)
Optional toppings, we used Enjoy Life Mini Chocolate Chips and WholeMe Salted Peanut Chocolate Clusters, or toppings of choice
*You can try using another chocolate protein powder but I’ve only tested Vega Clean Protein (purchase at Target) and Vega Sport Protein.
Notes: You can add vanilla, cinnamon, or a pinch of salt but to keep it simple I left those out to keep the recipe simple and we like them without but do add them in on occasion depending on the nut butter we use.
Preheat oven 350F. In a medium bowl mix together mashed banana until smooth. If you puree your bananas in a food processor (I use my mini food processor) or blender you can add the nut butter right in. In a small bowl mix the coconut flour and protein or cacao powder. Mix the wet and dry ingredients together until just combine. Spray mini muffin tins with coconut oil spray, or non stick spray of choice and spoon batter into cups. Sprinkle with optional toppings. Bake 350F for 12-15 mins, they should be set but dont’ over bake. Let cool for 5 minutes and remove from pan and placing in the refrigerator where they will continue to cool and set. While they are ok warm they are best chilled so we place them on a plate and put them in the fridge and pull them from there to eat. Enjoy!
