It’s getting hot in here, so let’s keep it cool. My salad obsession, more specifically my fruit salad obsession, still has a strong grip on me. This time there aren’t any grilled fruits though, just fresh delicious juicy fruits! Give me all the veggies and fruits, it must be summer! How does one keep from eating a whole watermelon in one day, or heck one sitting? Put it in a filling salad so you are too full to eat it that’s how. It didn’t stop there I had to add strawberries but don’t worry I added cucumbers, red onion, and baby spinach to balance it out. When I want some filling healthy fats, really more like when I have a ripe avocado on hand, I add that too! I could eat this salad every day it is so good! I could tell you how much nutrition is packed in this salad. I could tell you that it was so satisfying I don’t even get hungry before dinner when I have it for lunch. Instead I think I will just let this salad speak for itself, the pictures, the flavors I just can’t do it any justice you have to try it for yourself. I couldn’t even come up with a good name for this salad, well not one that is appropriate anyways.

 

Strawberry Watermelon Cucumber Spinach Salad
Makes 1 salad, easily doubled or multiplied for more
1c watermelon, 1″ cubes
1c strawberries, halved
1c cucumber, sliced and halved or quartered depending on size of cucumber
2 slices red onion
3-5oz baby spinach
1/2 avocado, diced optional

Dressing
Makes enough for 6-12 salads
1/4c white wine vinegar
3-4 TBSP dejon mustard, or honey dejon
1/2c extra virgin olive oil

 

Mix together dressing ingredients in a jar or tightly sealed container, shaking vigorously until mixed. Store in the refrigerator if making ahead of time and remaining dressing after for up to one week.

Plate or toss together watermelon, strawberries, cucumber, red onion, spinach, and optional avocado. Enjoy!
