Today I’ve got something that makes my mornings brighter and better, Morning Mocha Fudge! Yes coffee and chocolate to go with your coffee, does it get much better? It does, it’s healthy and delicious!

Don’t worry it’s not your typical super sweet indulging fudge. It’s healthy, packed with (plant-based) protein, bonus superfood option (keep reading!), and is made with only 4-5 simple ingredients! If coffee isn’t your thing, no worries just leave it out.

I’ve been whipping up bars, bites, and balls again to help make things easier with busy life. The girls are back at school in person and we have a lot going on with our build potentially being moved up to start soon. I’ve also been making versions of some of A’s favorites easier for her to eat as she got the rest of her braces on last week and can’t eat most of her go-to bars and snacks.

So lots of great recipes I cannot wait to share with you!

I’ve been grabbing a square of Morning Mocha Fudge to enjoy with my coffee in the morning before or when I take A to school since breakfast is later. It’s also a nice afternoon snack, so not technically just for mornings. I usually cut them in 8 pieces for the morning, sometimes a half piece for an afternoon snack so you can cut into whatever size works best for you and your needs.

So what’s in Morning Mocha Fudge?
Cashew Butter- I love the flavor of cashew butter and it’s my go-to for these. I usually make my own as it’s so easy and can be made without adding other ingredients. Oh the memories of 10 years ago when I would go into Whole Foods and grind warm cashew butter to dip dates in. Luckily I can make my own at home now. You can sub almond or another butter if you’d like.

Pure Maple Syrup- I usually make them with maple syrup but you want to sub honey or agave.

Chocolate Protein Powder- I use Four Sigmatic Creamy Cacao Plant-based Protein with Superfoods as it’s a staple and packed with superfoods, functional mushrooms, and adaptogens. Not it doesn’t taste like mushrooms! It helps elevate my wellness and gives me what I need to feel by best. I’ve made variations of these with other protein powders so I’ve also added the weight but all that I’ve used, at least 4 over the years, have worked with the same amount. Chocolate- I also like to add in a little chopped dark chocolate, and sometimes sprinkle a little extra on top!

Coffee- A little extra boost with ground coffee, or chopped coffee beans. Ingredients
  • 2/3 c cashew butter (homemade)
  • 1/3 c pure maple syrup, or sub honey
  • 1 c chocolate protein powder, about 85-89g (Four Sigmatic Creamy Cacao Plant-based Protein with Superfoods)
  • 2 TBSP chopped dark chocolate, more for topping if desired (Hu Simply Dark)
  • 1-2 tsp ground coffee, or 1 TBSP chopped coffee beans (Ground Mushroom Coffee With Lion's Mane)

Ingredients
  • 2/3 c cashew butter (homemade)

  • 2 TBSP chopped dark chocolate, more for topping if desired (Hu Simply Dark)
  • 1-2 tsp ground coffee, or 1 TBSP chopped coffee beans (Ground Mushroom Coffee With Lion's Mane)
Instructions
  1. Line a standard 9x5 loaf pan with parchment paper and set aside.
  2. In a bowl mix together cashew butter and maple syrup/honey with a spatula until combine. Add in protein powder, coffee, and chopped chocolate and mix as much as you can, it may still look like some of the powder is not incorporated. If you cannot mix it in with the spatula use your hands knead and mix the rest of the powder in.
  3. Press the mixture into the prepared pan. If you want the top to be nice and smooth you can also place a sheet of parchment paper (or fold sides from pan down) on top to smooth out or even press another pan on top.
  4. Press chopped chocolate into the top.
  5. Place in the refrigerator for at least 20 minutes (freezer for 10-15 minutes but not too long as they'll get hard) to set up.
  6. Cut bars and place in an airtight container.
  7. Store in the refrigerator until ready to enjoy.
