With MMAZ, Meatless Monday A-Z, being Xocolatl or Chocolate last week this weeks create week when I make another bloggers recipe was going to be hard to decide! Recipes were posted on Monday and there were so many good ones. Come Tuesday for lunch I decided I was going to make Heather’s Double Chocolate Protein Cake, umm YUM! Mine look like a cupcake and just screamed to be covered in frosting! So I decided to whip up some protein frosting to go with it. That’s not all…. come Wednesday I had a late morning workout and when I was done I decided to make Nicole’s Banana Chocolate Chip Protein Pancakes, again delicious! This week was going great two delicious chocolate recipes for lunch both made with my favorite protein powders from Vega! Come Thursday I went to write up this post and when I went to link the recipes came across Holley’s Mocha Pie so I rounded out the week with that! Yep it has been one crazy delicious week and since I couldn’t decide on just one recipe to post for my MMAZ create post you get all three, the Xocolatl Trifecta!! Enjoy!
For the Double Chocolate Single Serve Protein Cake I added Fulffy Chocolate Protein Frosting. To make the Fluffy Chocolate Protein Frosting to add to Heather’s Chocolate Protein Cupcakes take desired amount of yogurt, I used a 6 ounce container of my favorite So Delicious Greek Style Vanilla Coconut Yogurt, and slowly add in protein powder until desired fluff, maybe half a scoop of Chocolate Vega Performance Protein, maybe 2 tbsp. Test for sweetness which will depend on the yogurt and protein powder you use and add stevia in the raw or sweetener of choice as needed. In general I find I use a sprinkle of Stevia In The Raw with Performance Protein or Vega One if not using vanilla coconut yogurt, with vanilla yogurt it is sweet enough. With Vega Choc A Lot Protein Smoothie I use less or don’t need any.
For the Banana Chocolate Chip Protein Pancakes I omitted the chocolate chips from the pancakes and topped them with Kolat Superfood Fusion Espresso Hazelnut Butter. I made my youngest some too and she had chocolate chips in hers and we used Vega Choc A Lot Protein Smoothie, but had to alter the recipe a little.
For the Mocha Pie I made it with unsweetened vanilla coconut milk as I had some on hand I wanted to use up, espresso, and drizzled with a little chocolate ganache.
