It is cold outside but if you are ready for summer and craving something fresh and exotic try these Mango and Avocado Quinoa Lettuce Wraps.
Mango and Avocado Quinoa Lettuce Wraps
Makes 1 serving
1 cup cooked quinoa, cooled
½ c diced fresh mango
½ avocado diced
2 TBSP coconut water
Juice from half of a lime
5 romaine leaves (used organic artisan so they were smaller)
1-2 TBSP raw hemp seeds
Combine coconut water and juice of half of a lime and set aside. Combine cooled quinoa, diced mango, and diced avocado in a separate bowl. Add 1-2 TBSP of the coconut water and lime to the mixture. Prepare romaine leaves on a plate and put the quinoa mixture in the middle or just fill romaine leaves with the mixture. Sprinkle with hemp seeds and enjoy!
To plate as shown in picture above put quinoa salad into a bowl and invert onto the center of the plate. Sprinkle with raw hemp seeds, raw coconut, and lime zest.
