Minnesota Love Week continues and we’re ending with something pretty amazing! Today I have some Grain Free Peanut Butter Chocolate Chip Blondies that are so good not to mention grain free, gluten free, and vegan friendly, that are going to rock your world! If you don’t believe me come over and try them, sharing is caring. We made batches, let’s just say a few, tweaking and while one of the girls likes one, one likes the other, we went in between and with the overall conscience. Sometimes recipe testing is so hard, yep rough really rough. You may have even seen on Instagram Story how rough photographing is and how I ended up making a sundae with one of the Grain Free Peanut Butter Chocolate Chip Blondies. I was starving and needed energy to clean up the really big mess I had in the kitchen. Really though that’s not usually how it goes but it’s life and sometimes it happens.
To make these Grain Free Peanut Butter Chocolate Chip Blondies we used our favorite local Minnesota peanut butter, Buddy’s! Not just any Buddy’s but a new Classic Peanut flavor made with coconut oil that hit stores this week! Head over to Instagram for your chance to win 4 jars! We’ve loved Buddy’s Peanut Butter since A fell in love with the Honey Peanut flavor at the local Minneapolis Farmers Market. It’s been a staple in our kitchen ever since. We will now have to buy it from the grocery stores (it’s available at many stores across the US) because this is the first year we won’t be seeing Buddy at the market. A loves her Buddy’s Nut Butter that she was one of his littlest Kickstarter backers for Little Buddy’s Peanut Butter pouches. I think she loved the flavor so much that it’s not like other honey peanut butters, it’s made with just the perfect amount of raw honey and is sprinkled with sea salt. It isn’t too sweet and it’s small batch texture that’s not too smooth and still has little pieces of nuttiness is so good.
Now to these delicious Grain Free Peanut Butter Chocolate Chip Blondies! They are so delicious and while S loved the fluffier texture of my Grain Free Lemon Blondies I wanted something more like chewy peanut butter cookies but the perfect combo was in between. Great with a cup of coffee for breakfast, yep we do that, or a snack/dessert they hit the spot! Since Buddy’s does have coconut oil (there is no separation and no refrigeration required) I also made test batches with Peanut Butter and Co Smooth Operator. There is a slight taste and texture difference but both received the families seal of approval.

Grain Free Peanut Butter Chocolate Chip Blondies
Makes a 9×9 pan, 9-16 servings
1c almond flour*
1c coconut flour*
1 TBSP baking powder
1 tsp baking soda
pinch of salt
1 tsp vanilla
1c coconut palm sugar (Navitas Naturals) UPDATE: Using brown sugar or combination of half brown sugar and half coconut palm sugar will result in a chewier texture
1/2c peanut butter (Buddy’s Peanut Butter, also tested with Peanut Butter & Co Smooth Operator, you don’t want to use a refrigerated or natural peanut butter or the bars will be too dry)
1/3c coconut oil, melted
1/2c coconut milk, or non dairy milk of choice (So Delicious Unsweetened Vanilla Coconut Milk)
1/2c chocolate chips (Enjoy Life Dark Chocolate Chips)
*Be sure to measure flours by first fluffing with a fork, being sure not to pack the measuring cup, and leveling. When it comes to coconut flour packing it in can make a big difference.
Preheat oven to 350F. Line a 9×9 pan with parchment paper and set aside. In a large bowl mix together coconut sugar, vanilla, melted coconut oil, coconut milk, and peanut butter. If you have clumps you can heat it for 30 seconds to a minute in the microwave until you can stir in together. Sift almond flour, coconut flour, baking powder, baking soda, and salt together into the wet mixture. Stir the dry ingredients into the wet careful not to overmix, adding chocolate chips just before mixture comes together. Spread and press the mixture into the parchment paper lined pan. Bake for 28-32 minutes. Remove from the oven and let cool for 30-45 minutes before moving to the refrigerator to set. Cool completely before cutting and serving. Enjoy! We store our leftover bars in the refrigerator.
