It’s Zucchini time! Every year, with the exception of last year as we didn’t have a garden, we look forward to our garden producing zucchini! If there is one thing our garden produces will it is zucchini and we often have so many we are sharing with neighbors and friends. We make zoodles and zoodles of zoodles, haha and the girls always want zucchini bread. I remember a few years ago we even made 8-10 different loaves of zucchini bread to take up on a family camping trip. With 20 people they were gone in one day! As soon as we saw that 1st zucchini growing this year we started watching it and finally it was ready! My oldest requested zucchini bread and I said how about some muffins. Of course she said sure and asked if we could put chocolate chips in them. Well I went one better than that and make chocolate chocolate chip zucchini muffins! As I have mentioned before summers are crazy here with sports and activities and fuel is important so I made these power packed muffins with healthy fats, protein, and oats for some much needed carbs. These muffins are filling and packed full of goodness. You can even pack in some maca powder, hemp seeds, ect. Since making these for the girls I left out the maca and kept them nice and “smooth” and didn’t add any hemp seeds. For a real treat A likes to top here with Sweet Spreads Chocolate Brownie Coconutter! On the go, or at home they are a perfect start to any day!

 

Double Chocolate Zucchini Power Muffins
Makes 12 muffins
1 1/4c oats, used gluten free
2/3c buckwheat flour
1/2c chocolate protein (used Vega Sport Chocolate Protein)
1/3c cocoa/cacao powder
1/2c coconut sugar
1c non dairy milk (used So Delicious Unsweetened Vanilla Coconut Milk)
1/2c almond butter (used Justin’s Vanilla Almond Butter which produced slightly sweeter results than raw almond butter in another batch)
1 TBSP ground chia, plus 4 TBSP water
1 tsp baking powder
1 tsp baking soda
1/2 tsp sea salt
1 tsp vanilla
1c shredded packed zucchini with most of the moisture drained/removed (about 2 small zucchinis)
1/3c chocolate chips (used Enjoy Life Chocolate Chips)

 

 

Preheat oven to 350F. In a small bowl mix the ground chia seeds with water and set aside. Grind oats in a mini food processor or grinder pulsing a few times to break them up but you do not want flour texture. You can omit this step but you will have more texture in your muffins. In a large bowl mix together chopped oats, buckwheat flour, protein powder, cocoa powder, baking powder, baking soda, and salt. In a medium bowl whisk coconut sugar, milk, almond butter, and vanilla together until smooth. Add the chia seeds, should be a gel consistency, into the wet ingredients. Stir the wet ingredients in with the dry. Stir in zucchini and chocolate chips. Spray muffin tin with coconut oil or non stick spray, or line with cupcake liners, and pour batter into tins. Bake 25-30 minutes. Remove and let cool 10-15 minutes before removing from tins and placing on a wire rack to continue cooling. Enjoy!
