
Are you a fan of chocolate and coconut? Love Almond Joy Candy Bars? This recipe is for you! Chocolate Coconut Chia Protein Pudding is great for breakfast or dessert.
Chocolate Coconut Chia Protein Pudding
Makes 1 serving
1c coconut milk, or non dairy milk of choice (used So Delicious Unsweetened Vanilla Coconut Milk)
2TBSP chia seeds
1 scoop chocolate protein powder (used Vega One Chocolate)
2TBSP canned coconut milk or So Delicious Culinary Coconut Milk box
2TBSP shredded coconut (used Let’s Do Organic Finely Shredded Unsweetened Coconut)
sweetener, optional (used 1/2 a packet of Stevia In The Raw)
1-2TBSP sliced almonds
Chocolate Fudge Drizzle, optional (recipe can be found here, at the bottom)
In a bowl mix together chia and the 1 cup of milk, let sit for approx 15 minutes or more, to thicken. I usually mix the chia and milk together the night before, or before my workout, and store it in the refrigerator. Stir in chocolate protein powder to the chia mixture until combine. In another bowl mix together 2 tablespoons canned coconut milk and shredded coconut, add sweetener to taste if needed. In a glass or bowl layer half of the chocolate chia mixture, all of the coconut mixture, and the remaining chocolate chia mixture. Top with optional Chocolate Fudge Drizzle and sliced almonds. Enjoy!
