I made this a few months ago when I was still having soy in moderation which I have since cut out a majority of the time and have very limited amounts on a limited bases. The other day I was craving it and realized I hadn’t posted it and it is perfect for right now with all the blueberries being in season and it being National Blueberry Month.
Spring Summer means fun, flavorful, and fresh salads! I love salads that are full of color and flavor and look as good as they taste. I was craving one of my favorite salads but when I went to two stores and the strawberries weren’t looking so fresh I had to switch it up and make it with blueberries. I know I have made versions of this salad with blueberries before but I get into a “rut” where I have a favorite combo and all other options slip out of my head and aren’t options and I forget how delicious they are. I realized how it is kind of like walking through a garden with blinders on only looking at certain things and not appreciating all the beauty around me. I use to be one that would have to always switch things up but recently getting in phases of eating the same things. I need and want to go back to mixing things up and always having things be different no matter how big or little the changes are. Back to when I use to go shopping with my girls and they would pick a new fruit and or vegetable to try every week, which we haven’t done for a couple of weeks now being on the go and out of town we usually are rushed at the grocery stores. So much easier said than done when things get crazy and busy and even more so now with life filled with smoothies, “snacks”, and quick meals on the go. Not that salads don’t fit in there because I am one to take salads on the go. Yep with people looking over at me and my big Tupperware bowl full salad at the stop light (in the passenger seat). Or the crazy soccer mom with me and one of my girls sitting there on the sidelines cheering and eating our salads, yep what you do with back to back games. Speaking of which with the crazy schedule of my oldest playing traveling soccer, both girls playing rec soccer, gymnastics, and other things we have going on I saw a cute canvas Kate Spade tote at the store a while ago and told my oldest I thought I should get it for carrying our food and stuff out to the games. What do you think?
Ok back to the salad, this delicious salad is great for lunch or dinner and always seems to hit the spot for me weather it be with blueberries or strawberries.
Do you have a favorite go to salad? I have a few and they change with the months I think but this is one of mine at the moment.
Chicken, Blueberry, Orange Spinach Salad
Makes 4 servings
8c baby spinach
1lb cooked chicken strips or chicken free chicken strips (used Beyond Meat Grilled Chicken-Free Chicken Strips)
1c fresh blueberries
4-6oz fresh goat cheese, or feta
2-4 TBSP chopped walnuts, optional
balsamic vinegar or dressing of choice (drizzled with balsamic vinegar)
Wash and prepare your spinach and veggies. Peel oranges, pull apart segments, and cut orange segments into 3rds. and divide among plates. Top with cooled or warm cooked chicken/tofu, blueberries, oranges, and crumbled fresh goat cheese/feta cheese. Drizzle with balsamic or dressing of choice. Enjoy!
