I am a fan of breakfast bowls, they are one of my “Super Mom” go tos and I don’t just enjoy them for breakfast. This delicious breakfast bowl is packed with protein, omega-3, antioxidants, carbohydrates, and everything you need to get you going and keep you fueled and feeling full for hours! Enjoy it hot or cold, with or without milk, it is a great use for that extra quinoa sitting in your refrigerator from last night.
1TBSP amaranth popped, approx 1/2c popped (instructions on popping amaranth here if needed)
1TBSP chia seeds
1c cooked quinoa, cooled or warm
1/2 an apple, chopped (used an organic fuji apple)
1/2c fresh blueberries
1/4-1/2tsp cinnamon
1-2 TBSP walnuts, chopped (optional)
1c almond milk, or non dairy milk of choice (optional)
In a bowl mix your cooked quinoa, popped amaranth, chia, and cinnamon. Mix in your apples and blueberries and top with walnuts. If desired you can pour some milk over the top I usually enjoy mine without but mix it up from time to time. Enjoy!
