Ever have one of those days were you want a salad but also want a sandwich? I have those often and was craving a bunch of different veggies. Everyone in the family wanted to try my “pretty rainbow sandwich” and I can’t say I blame them. To make this sandwich you can use whatever veggies you have on hand or whatever you are in the mood for.

 

For the sandwich shown I used:

2 slices of Food For Life Ezekiel 4:9 Sprouted Whole Grain Bread (love this bread!)

Half of an organic Haas Avocado mashed

Handful of Organic Baby Spinach

10 cucumber slices, thinly sliced

a few slices of red onion, thinly sliced

8 slices of Watermelon Radish, thinly sliced

a large organic carrot, into long matchstick shreds

a few grape tomatoes sliced (didn’t have any good regular tomatoes or I would have used those)

a little salt, pink Himalayan, and pepper

 

I used my Cuisinart food processor to prepare the veggies, storing the extras to use on my salad the next day or to make another sandwich. I put most of the mashed avocado onto one of the slices of bread and a tiny bit on the other just to help “hold” the tomatoes. I layered everything on my sandwich in the order in which it is listed.

I think this sandwich is just as delicious as it is pretty. Are you ready to taste the rainbow?
