Just cannot get enough watermelon this year so yes more watermelon salads! Our garden is producing lots of tomatoes and this is just the start as we have so many that are still green. As I was sipping a Watermelon Mint Avocado Smoothie and picking tomatoes from the garden the smell of the tomatoes and the taste of the smoothie just clicked and I got an idea. While it probably wouldn’t taste good to add tomatoes to my smoothie, no doesn’t even sound a little appealing I know, I thought a salad would be the perfect way to try the combo. So I picked some mint and went back up to the house hoping the girls hadn’t eaten all the watermelon so I could try it out for lunch. I was in luck there was some watermelon left so I threw it together and it was amazing! I’m sure you are questioning some of the ingredients but if you think of them in pairs and what goes together it really does work. Still not convinced? Make the salad and just take a bite and I’m sure you will agree that this is a flavorful and fresh combo that works. So weather you are in a salad rut, yes I still can’t believe people say salads are boring. I probably should get a shirt that says that since I have been saying it all summer long. Or maybe you are just looking for a new combo or to try something new add this salad to your list to make for lunch. Or it also works great for dinner as a main dish or side.
Tomato Watermelon Salad
Makes 1 serving, easily multiplied for family or larger groups
1c 3/4″ seedless watermelon cubes
1c halved cherry or grape tomatoes
2 sprigs fresh mint leaves
1/2 lime
1/4-1/2 ripe avocado, cubed/diced
In a bowl combine watermelon cubes and tomatoes. Squeeze lime over watermelon and tomatoes. Add in avocado and mint leaves and gentle toss to combine. Enjoy!
