The kids wanted spaghetti and I didn’t have the stuff to make sauce or a jar of it on hand. I had sweet potatoes though, a lot! So whipped up a sweet potato sauce. Love the bright orange color!
Sweet Potato Spaghetti
Makes 6 servings
1lb whole wheat spaghetti noodles, or noodles of choice
2c sweet potato flesh, cooked
2c vegetable broth, low sodium
1 shallot, finely chopped
1 glove garlic, minced
sea salt and pepper, to taste
2c small tomatoes, halved
Bring a large stock pot of water to a boil. In a blender or food processor, used a Vitamix, blend sweet potato, shallot, garlic, and broth until smooth. Drop noodles in water and cook until al dente. Pour sweet potato sauce into a saucepan and warm, adding salt and pepper to taste. When noodles are done cooking, drain, return to pan, and toss with warmed sauce. Plate and top with tomato halves. Enjoy!
