Cinnamon Apple Almond Butter Omelet

 

Things tend to get interesting when cooking away from home and I don’t have a kitchen full of my staples or equipment. It was one of these times away from home when I started eating Simple Sweet Omelets. Not wanting a traditional omelet, wanting something sweet these omelets taste less like an omelet and more like a crepe or french toast, but are grain free! All you need is some egg whites, or eggs, and fillings! I like to also add a little vanilla and cinnamon sugar to make it a little sweeter. Of course adding nut butter drizzle on top is the “icing on the cake”! While you can fill them with any fruits or nuts these are two combinations I came up with using what we had at the time. One a Cinnamon Apple Almond Butter Omelet with apples, cinnamon sugar, and some Justin’s Vanilla Almond Butter drizzled over top! The other filled a Sweet Potato Cinnamon Raisin Peanut Butter Omelet with sweet potatoes, cinnamon, and Peanut Butter & Co Cinnamon Raisin Peanut Butter!

 

What would you fill your Simple Sweet Omelets with?

 

Here is what I use to make the versions shown. Again this post is more for inspiration and I encourage you to customize it to suit your needs and tastes!

 

Cinnamon Apple Almond Butter Omelet

Makes 1 serving

3-4 egg whites

1/2- 1 tsp pure vanilla extract

1-2 tsp cinnamon sugar (I use a combination of cinnamon and coconut palm sugar)

1/2- 1 apple, chopped (used a Fuji)*

1-2 TBSP Justin’s Vanilla Almond Butter

Sweet Potato Cinnamon Raisin Peanut Butter Omelet

Makes 1 serving

3-4 egg whites

1/2- 1 tsp pure vanilla extract, optional

1 tsp cinnamon sugar (I use a combination of cinnamon and coconut palm sugar)

1 baked sweet potato (love sweet potato and over filled this one!)

2 TBSP Peanut Butter & Co Cinnamon Raisin Peanut Butter

 

*If you want your apples tender, I like a little crunch in mine, you can pre-cook your apples before adding or you can cook your apples first and pour eggs over top instead of adding them in the filling.

 

Preheat oven broiler to high. Spray an oven safe skillet  with coconut oil, or non stick spray, and heat over medium heat on the stove. If adding vanilla and or cinnamon you can mix it in with your eggs/egg whites or you can just add it in on top after adding the eggs to the skillet.  Add eggs/egg whites and vanilla and cinnamon if using to skillet and heat until almost set on the top. Add toppings, for both I also sprinkled a little cinnamon on top of filling. Place pan in the oven under the broiler until desired doneness.  Remove from oven and plate, top with nut butter and or toppings of choice. Enjoy!
