Red, White, and Blueberry Breakfast Cookies

I decided to make some healthy yet fun breakfast cookies for this 4th of July week. These cookies are packed full of delicious healthy berries! They take less then 10 minutes to make, 10 minutes to bake, and are a great for an on the go snack or breakfast!

 

Red, White, and Blueberry Breakfast Cookies

Makes 16-18 cookies

3 c gluten-free oats, divided

2 medium bananas

1/2 c milk (used So Delicious Unsweetened Almond Milk Plus)

3 TBSP coconut palm sugar, sucanat, or brown sugar (used Navitas Naturals Coconut Palm Sugar)

2 tsp pure vanilla

1/2 tsp cinnamon

1 tsp baking soda

1/4 tsp salt

2 TBSP ground flax seed

1/3c dried blueberries, not crunchy freeze-dried

2 TBSP rehydrated goji berries, placed them in a bowl of water for a couple of minutes to soften, drain, and rough chop (used Navitas Naturals Goji Berries)

 

Preheat oven to 350. In a Vitamix or food processor blend bananas, milk, vanilla, sugar, and cinnamon. Add in 2 cups of oats, baking soda, and salt and blend until smooth. Stir in remaining cup of oats, flax seed, and berries into the mixture. Drop spoonfuls of the cookie dough onto cookie sheet. Bake 10 minutes. Let cool a couple of minutes and remove from baking sheet and place on cooling rack. Enjoy!
