Light and fresh these quinoa stuffed tomatoes are a perfect lunch or light dinner. They also make a great side dish.
Quinoa Stuffed Tomatoes
2 large organic beefsteak, or large, tomatoes
1 1/2 c organic quinoa, cooked and cooled
1 avocado, diced
1 TBSP red onion, finely chopped
Sea salt and pepper to taste
2-4 c organic baby spinach
Hallow out tomatoes by cutting out a circle around steam area and then removing insides of tomatoes. Flip tomatoes upside down to drain. Mix quinoa, onion, and avocado in a bowl. Add salt and pepper to taste. Arrange spinach on a plate. Spoon quinoa mixture into tomatoes and serve on the plates of spinach. Enjoy!
