Queso Veggie Quesadillas

 

As part of Meatless Monday A-Z, MMAZ, one of the weeks we are suppose to pick one of the recipes submitted to make. This month the ingredients were queso and raisins. I decided to make Heather’s, from Better With Veggies, Queso Veggie Quesadillas! When I saw these posted I wanted to run to the kitchen and make them! It is no secret I really like mexican food. Oh those greens peaking out of her cheesy queso quesadillas… yum!

I a made a couple changes as the girls aren’t fans of mushrooms and the tomato I cut into didn’t look very good. That wasn’t going to stop me from making these so I adapted and kept going. These quesadillas were quick, simple, and so delicious!

I made the queso per her recipe omitting the jalapeno (for the girls) and using canned tomatoes, drained, I ended up not needing to add the almond milk. We used Food For Life Sprouted Ezeikiel 4:9 Taco Sized Tortillas, Power Greens instead of spinach as we had that on hand, Go Veggie Mexican Shreds, and used whole pinto beans instead of refried and the remaining canned tomatoes to make our version bean and cheese with greens queasdillas! We will definitely be making these again! These pictures don’t do them justice but I was done playing with my camera as my tummy rumbled and the rest of the family had already inhaled theirs and were eyeing up mine.
