Pumpkin Latte

 

My youngest and I LOVE pumpkin lattes! She will get a Pumpkin Spice Latte, PSL, without the espresso, on our coffee dates and is in heaven. We like them hot and iced. To make them at home I use to buy the pumpkin syrup, which is always changing at the coffee shop and she doesn’t like it and it’s packed with sugar. Since So Delicious Pumpkin Coconut Milk won’t be in stores until next month I had  to try to make a healthy version at home came up with a Protein Pumpkin Latte. I make ours with our espresso machine and or Vitamix but as I know everyone doesn’t have these I also made it on the stove.  I make mine with the protein powder and hers without.

 

Protein Pumpkin Latte

Makes 1 serving

1c coconut milk, or non dairy milk of choice (used So Delicious Unsweetened Vanilla Coconut Milk, only 45 calories)

2TBSP pumpkin puree

½ tsp pumpkin pie spice

2 shots espresso

1/2 a scoop vanilla protein powder (used Vega Sport Performance Protein)*

1-2TBSP vanilla creamer (used So Delicious French Vanilla Coconut Milk Creamer)

Sweetener to taste (Stevia in the raw, sugar, agave, maple syrup), I don’t think it need any but it is personal taste

dash of cinnamon, pumpkin pie spice, or nutmeg for garnish, optional

 

*Omit protein powder for children.

 

Combine milk, pumpkin puree, creamer and pumpkin pie spice in a sauce pan and heat on medium until desired temp. Alternatively you can steam milk using the frother on an espresso machine and then stir in pumpkin puree, creamer, and pumpkin spice. Or if you have a Vitamix make it in there on the soup cycle. Mix in protein powder. If making with a frothing attachment on an espresso machine or in a Vitamix  it will be thick and frothy. If making it on a stove you can use a frothing wand if desired. Pour into a mug, add espresso, and sweeten to taste. Dash with optional cinnamon, pumpkin pie spice, or nutmeg. Enjoy!
