Many of us have had that Saturday morning where we want pizza for breakfast, and how about having breakfast for dinner? These Pizza Pancakes are perfect for any meal? The girls love making these and the best part everyone can have what they want on their pizza!!
Pancakes (Pizza Crust):
This makes 2 pancakes made in a 10” skillet and 2 made in an 8” skillet. You can stretch it and make 4- 10” pancakes that are a little thinner.
2 ripe bananas (approx. 1c mashed)
4 eggs (or flax eggs 1 TBSP ground flax seed, 3 TBSP water per egg let sit 5 mins to thicken)
¼ c whole wheat flour (or gluten free flour or almond meal)
1 tsp vanilla
dash of cinnamon
¼ tsp baking powder

This is all up to you!
We like to use peanut butter, an organic strawberry spread, or fresh strawberry puree for sauce.
Then top with fresh strawberries, mango, blueberries, peaches, bananas, raspberries, or any fresh fruit! Then add a little sprinkle of organic unsweetened coconut for the “cheese”.
I find this recipe works best in a blender or Magic Bullet just throw it all in and blend until smooth. Alternatively you can mash the banana (until free of lumps) and mix all the ingredients (bananas, eggs or flax eggs, flour, cinnamon, vanilla, baking powder) together until smooth.
Heat a 8” and or 10” skillet on the stove on medium. Lightly spray with non-stick spray (I like coconut oil, or coconut oil spray).
Pour 1/4th of the batter (less if using a 8”) in the skillet. If you want to try to flip it wait until it is bubbling and set on edges and flip. I find it works best to cook until almost set on top and bubbling and then set in the oven with the broiler on a minute or two. No flipping required! This will only work with a metal skillet with a metal NOT PLASTIC handle.
