Pistachio Banana “Ice Cream”

My youngest is all about pistachios, yep they are one of her favorite snacks. The girls are into “banana swirl” ice cream lately which is just frozen bananas blended to make “ice cream”. With St. Patrick’s Day coming up I was wondering if I could make a green ice cream and the first thing that came to mind was pistachios! It didn’t turn out as green, more of a light green hue to it and it darkened from the bananas I think when we put it in the freezer to get a little firmer, as we had hoped but it was still delicious and very light flavored.

 

Pistachio Banana “Ice Cream”

1 serving

1/4c raw unshelled pistachios

1 large or two small frozen bananas

1-2 TBSP unsweetened almond milk (or other non dairy milk)

1-2 TBSP raw unshelled pishachios, chopped (optional if wanting texture to your ice cream or omit for creamy smooth ice cream)

 

I found that putting the banana into a Magic Bullet or small food processor first and pureeing and then adding the pistachios and milk worked best. Stir in chopped optional pistachio if you want to add them. Pour into a bowl and freeze 1-2 hours if freezing longer it will be hard and you will need to let it thaw. Top with a couple crushed pistachios and enjoy!

 

I recently got a VitaMix and tried another version of this ice cream which is also tasty and made a larger batch.

1c almond milk

1 ripe banana

3/4 cup raw pistachios (extras crushed if you want to stir them in)

4 c ice

 

Place all ingredients in a VitaMix and blend until smooth! Enjoy!
