Sometimes nothing hits the spot like a fresh green smoothie! There are so many green smoothie recipes out there, including many I have posted, that I don’t post them too often. When I get in a phase having one I really love I know I have to share it, even if is something as simple as a Pineapple Mint Protein Smoothie. It is so fresh, refreshing, and calming at the same time! Weather I have it in the morning or afternoon it always hits the spot! While you could omit the protein it really packs a punch and I like to make it with my favorite nutritional protein shake, Vega One, for not only the protein but the vitamins, minerals, and superfoods! Especially a staple on busy on the go days.
Pineapple Mint Protein Smoothie
Makes 1 serving
1c water or non dairy milk of choice (I like coconut water or So Delicious Unsweetened Vanilla Coconut Milk)
1-1 1/2c pineapple chunks, fresh or frozen
Fresh mint leaves, from 2-4 sprigs of mint
handful of baby spinach
1 scoop plain protein powder (used Vega One Natural)
1/2-1c ice
In a Vitamix, or high-speed blender, blend 1/2 cup of water, mint leaves, spinach, protein until smooth, and ice until smooth. Pour into glass. Rinse blender and blend together remaining water and pineapple until smooth, pour over green layer. Optionally you can blend everything together at once instead of layering. Enjoy!
