For MMAZ, Meatless Monday A-Z hosted by Heather of Better With Veggies, there are 2 weeks where you create recipes with the specified ingredients and one week a month that you make another bloggers creation. This month the ingredients were Unbleached Flour and Vanilla. Going through the recipes submitted I saw Spabettie’s Perfect Vanilla Waffles that were made using club soda which sounded interesting to me. The girls love waffles and when I saw the waffles were topped with Totally Tahini Cups with Coffee Cream Filling I was really intrigued. Our week didn’t go as planning and I ended up making the waffles last minute and didn’t have everything to make the Tahini Cups with Coffee Cream Filling so I improvised and make my Vanilla Bean Coconut Butter Almond Butter Cups using Wild Friends Vanilla Espresso Almond Butter.
These waffles were quick, easy, and delicious! Our waffles probably turned out a little denser than Spabettie’s version as I thought I was out of all-purpose gluten-free flour so I used a gluten-free blend I had with brown rice flour. Of course I found the all-purpose gluten-free flour after I already started to make the waffles. I also omitted the agave as I had a date paste with vanilla bean I made I had to use up. The waffles were delicious and the family loved them!
