Peanut Butter Lover Muffins Filled with Peanut Butter & Co Dark Chocolate Dreams

We love peanut butter!  Today is National Peanut Butter Lover’s Day so with that we made Peanut Butter Lover Muffins!  Ya I know it isn’t a very creative name but when I asked the girls what to call them they said Yum! and Delicious!  I didn’t think Yum Muffins or Delicious Muffins would work, don’t get me wrong they are both of those things, but not very descriptive.  We hope you love these delicious and yummy muffins as much as we do!

Peanut Butter Lover Muffins

Makes one dozen muffins

Ingredients:
2 medium very ripe bananas, mashed / pureed
½ c creamy peanut butter  (used Peanut Butter & Co Smooth Operator)
¼ c  unsweetened applesauce
2 eggs (used flax eggs, 2 Tbsp and 6 Tbsp water)
1 c milk almond milk (Used Silk unsweetened)
1 ¾ c whole wheat flour (or GF flour)
1 Tbsp baking powder
1/2 tsp salt
2 tsp. vanilla extract
3-4 Tbsp. honey or brown sugar (used coconut sugar)
¼ c or more! peanut butter for filling (used half Peanut Butter & Co Smooth Operator and half Peanut Butter & Co Dark Chocolate Dreams)

Found that with natural peanut butter they needed sweetener (brown sugar, coconut sugar, or honey).  With the Smooth Operator or Dark Chocolate Dreams I added coconut sugar but I don’t think they really needed it. 

Preheat oven to 400.  In a large bowl whisk the mashed banana, ½ cup peanut butter, applesauce, eggs (if using flax eggs mix water and flax let sit 5 mins and then add in), vanilla and milk until smooth.

In a separate bowl combine flour, baking powder, salt and sweetener (if using) and stir until just moistened.

Spray a muffin pan with nonstick spray. Fill each tin about 1/3 full.  Put ¼ c (or more depending on how much filling you want) peanut butter in a Ziploc bag add snip off a corner.  Squeeze approximately ½ Tbsp or more in the middle of each tin.  Fill the tins with batter until just about full.

Bake at 400 for 22-24 minutes or until they are just starting to turn golden brown and a toothpick comes out clean but be careful not to overcook.

Serve warm if you want the peanut butter to be warm and melted, or serve anytime!  Enjoy!
