Peach Pie Oatmeal

I love oatmeal and am always playing and making new combinations with it. I like making this Peach Pie Oatmeal or peaches n cream oatmeal when I have some extra ripe peaches lying around. Lately with this rainy, chilly, and non-summer like weather we have been having it hits the spot in the morning.

 

Peach Pie Oatmeal

makes 1 serving

1/2 c oatmeal

1 c water

1/2 tsp cinnamon

1/4 tsp nutmeg

1/2 tsp stevia or sweetener of choice, optional

1 peach

 

Topping

2 Deglet Noor Dates

1 TBSP pecan halves (about 5 halves)

1 TBSP Raw Shelled Hemp Seed

Dash of cinnamon

 

In a small food processor pulse dates and pecans  until chopped, alternatively you can do this with a knife. Put dates and pecans in a small bowl and stir in hemp seeds and cinnamon. Set aside. Prepare oatmeal per package directions, I like making mine on the stove top. Heat broiler on High. Slice peach into slices, place peaches on a foil lined baking sheet, easy clean up, and put under the broiler for a couple of minutes watching careful as you don’t want your peaches to burn. Remove from oven and let cool slightly. When oatmeal is done cooking add in cinnamon, nutmeg, and optional sweetener. Slice all but a few of your peach slices in half or thirds and mix into your oatmeal. Spoon oatmeal into bowl and garnish with remaining peach slices and pecan date topping. Enjoy!
