Yes you read that right, Peanut Butter and Jelly Nachos! This idea came to me while on vacation and I couldn’t wait to get home to make it. I thought it would be great for back to school and my oldest already plans on taking it today for her 1st day back. You can put as much or as little as you want on them and customize them how you wish. These would be great for breakfast, lunch, school lunch (see below), or anytime. Because I couldn’t wait to make these when I got home and it was a girls night I made them for dinner, the girls loved them!

 

PB&J Nachos

Makes 1 serving

2 slices of bread or 2 taco size tortillas (used Food For Life Ezekiel Sprouted Taco Size Tortillas and Ezekiel 4:9 Sprouted Whole Grain Bread)

1-2TBSP peanut butter (used Peanut Butter & Co Smooth Operator)

1-2TBSP jelly (used Organic Seedless Raspberry Jelly)

1/2 banana, slices sliced in half

3-6 strawberries, sliced

1/8-1/4c fresh blueberries

optional spoonful or two of yogurt (we use So Delicious Vanilla Greek Coconut Milk and Stonyfield Organic Greek Vanilla), coconut, nuts, additional fruits or toppings of choice

 

Toast bread if using bread, if using tortillas bake for 5-8 minutes at 350. Slice bread/ tortillas into triangles or wedges and spread on a plate. Place peanut butter and jelly in a small snack bag and snip the corner. Drizzle peanut butter over chips. Sprinkle strawberries, blueberries, and bananas over chips. Drizzle jelly over the top and add additional optional toppings as desired. Enjoy!

To make this for a lunch box I put the toast/ tortillas in a container. I place the cut up fruit in another container and send with a Peanut Butter & Co single serve packet. Had she wanted jelly or yogurt I would place those in a small baggie or container. When she gets to school she just squeezes her peanut butter over and tops with fruit.
