So as a mom I multitask, in the process came up with this on accident. Was giving 22 Days Plantbased Proteinpowder another shot. I won it and had tried it with almond milk and water and wasn’t crazy about. It was creamy but much too thick for me to drink after a workout. So giving it another shot was going to blend it with more almond milk and some espresso this time. I put the espresso, protein powder, and milk into my bullet and had run out of milk before putting the amount I planned on into it. Put it in the fridge as I got pulled away to do something. Came back pulled my shake out and a new carton of milk and went to pour more in it when I realized it was like pudding! Also tried another version with chia seeds.
Mocha Protein Pudding
3/4 c almond milk, divided (used Silk unsweetened Almond Milk)
2 shots brewed espresso chilled
2 scoop 22 Days Chocolate Plant Protein Powder (not sure if it will work with other kinds you will have to play with it)
I used a Magic Bullet to create this you can try a blender but may need to double batch for there to be enough depending on blender. Mix almond milk, espresso, and protein powder until smooth. Chill for 15-30 mins. Pour into cute little oversized espresso cups if you would like to share, or keep it all to yourself, grate optional chocolate over top. Enjoy!
Chia Protein Pudding
3TBSP Chia Seeds
1 1/2 c almond milk, divided (used Silk unsweetened Almond Milk)
1 scoop chocolate protein powder (used 22 Days Chocolate Plant Protein Powder this time)
Mix chia seeds and 1 cup of almond milk in a bowl and refrigerate overnight for best results, or a few hours until thickened. Just before eating stir in 1 scoop of 22 Days Chocolate Protein Powder and remaining 1/2 cup of almond milk. Top with berries if you would like or enjoy without.
