Grinch Protein Smoothie

 

We will do just about anything to make a green smoothie fun. With the holiday season I decided to make a Grinch Smoothie! While this version is mint, because I love peppermint this time of year, it can be made with any green smoothie. My youngest actually prefers it with a mango smoothie using the Vega Tropical Tango Protein Smoothie mix. Drink your greens and have fun doing it! Cheers to a happy, healthy, holiday season!

 

Grinch Protein Smoothie

Makes 1

1 c non dairy milk of choice (used So Delicious Unsweetened Almond Milk Plus)

1 scoop natural protein powder (used Vega Oh Natural Protein Smoothie)

handful of mint leaves or peppermint extract to taste

handful or two of organic greens, optional (used Power Blend of kale, spinach, and chard

ice or frozen banana optional (I add about a cup of cubes)*

1 strawberry, fresh or frozen

2 TBSP thick yogurt (used So Delicious Vanilla Greek Style Yogurt)

 

In a Vitamix, or high-speed blender, blend together milk, protein powder, mint, and ice and/or bananas until smooth. Pour into a glass.  Make the little santa hat with the strawberry and yogurt. If using a fresh strawberry you can slice the bottom and set on the rim or use a wooden skewer to place in glass). Pipe yogurt around the strawberry and a ball on the top. Enjoy!
