Gingerbread Oatmeal with Clementine Cuties

 

It is cold outside, the snow is blowing, and a bowl of gingerbread oats is just what I need to warm up!  Warm, filling, delicious, paired with Cuties (clementines) I would even eat this for a snack or dessert!

 

Gingerbread Oatmeal with Clementine Cuties

Makes 1 serving

1/2 c oats, gluten-free (or 1/4 cup if using steel cut oats)

1 TBSP coconut palm or  maple syrup

1 tsp molasses

1/4 tsp ground ginger

1/8 tsp ground cloves

1/2 tsp ground cinnamon

1-2 Cuties, clementines

1 TBSP cinnamon sugar (use a mixture of coconut palm and cinnamon)

 

Turn on broiler to high. Cook oats according to directions as desired with water or non dairy milk. Add coconut palm/ maple syrup, molasses, and spices in while cooking. While oats are cooking line a baking sheet with foil, slice clementines in half, sprinkle with cinnamon sugar, and broil for a few minutes (about 3-5) watching carefully. Remove clementines when nice and golden on top and let cool. Place oatmeal in a bowl and with a serrated tipped spoon or grapefruit knife remove the fresh from the clementines and place on top of the oatmeal. Enjoy!
