Cinco de Mayo! I decided to make the girls some fun Festive Floats to celebrate. The girls and I made what they called Snow Fairy Floats a couple of months ago that I posted on Instagram. They picked Zevia Black Cherry thinking that it would be pink pop and made floats only to have the pop be clear so they decided to call them Snow Fairy Floats. I had the girls also picked up some Ginger Ale so I decided to pair that with a tropical sorbet for these Festive Floats.  I made a Lime Sorbet and Mango Sorbet. I have included the Mango Sorbet recipe we used in the floats as well as another favorite of ours we make without coconut milk. You can use any soda (we call it pop here!) to make these fun floats making the possibilities endless. Add a rainbow sprinkles and you are ready to celebrate! Of course you can make these anytime with or without sprinkles.

Festive Floats

Makes 4 servings

4 cans soda of choice (used Zevia Ginger Ale)

Lime or Mango Sorbet, recipe below

1/4- 1/3 c rainbow sprinkles, optional

1 TBSP coconut oil or coconut milk if making Lime Sorbet to stick sprinkles

 

Lime Sorbet

Makes 4 servings

2 large limes, zested and juiced (about 6 TBSP juice)

2-3 TBSP agave, coconut palm sugar, or sweetener of choice

2/3 c So Delicious Culinary Coconut Milk Original or thick cream from full fat canned coconut milk

2 TBSP coconut milk

3-4 c ice

 

Mango Sorbet (2 ways)

Makes 4 servings

1 large mango, peeled and pitted

2 TBSP agave, coconut palm sugar, or sweetener of choice

2 TBSP coconut milk or coconut milk creamer (used So Delicious Vanilla Coconut Milk Creamer)

3-4 c ice

 

Or

 

2 large mangos, peeled and pitted

2 TBSP agave, coconut palm sugar, or sweetener of choice

4 c ice

 

 

In a Vitamix, or high-speed blender, blend together ingredients for sorbet of choice adding ingredients in the order listed. If you are not serving right away or your sorbet isn’t quit thick enough put in the freezer until ready. If you are adding sprinkles to your rims dip or coat the rim of your glasses in coconut oil or coconut milk (culinary or canned) and dip into sprinkles. Scoop sorbet into glasses and pour soda over top. Cheers, enjoy!
