My pre-workout go to in the past was a shot or two of espresso. Not the best and I have grown and change but my love for coffee is still there and my inspiration for these Energy Coffee Bites! I add chopped espresso beans for crunch. If you aren’t one that likes chocolate covered espresso beans you can grind the coffee beans. So now I have an acceptable way to enjoy my coffee before a workout! If I had enough coffee I could…. do it all.
Espresso Energy Bites
8 medjool dates, pitted
2 TBSP espresso almond butter or almond butter (used Wild Nut Friends Vanilla Espresso Almond Butter)
1/2 c oats, gluten-free
1 TBSP chopped espresso beans, or 1 TBSP espresso beans ground for less texture
1 TBSP cacao nibs (Navitas Naturals)
Blend dates and oats in a food processor until coarse crumble. Add in almond butter. Pulse in espresso beans and cacao nibs until just combine. Mixture will be crumbly but should stick together when pinched between two finger. Roll into balls. Store balls in the refrigerator, or freezer for longer storage, until ready to enjoy!
