Yesterday was National Peanut Butter Lovers Day and while I probably should have posted this then I had it scheduled for today. Hopefully your not peanut buttered out but if you’re like me that isn’t possible, but if so you can pin it for later.

If you are a regular reader of my blog you know I love the “Elvis” peanut butter and banana combo, of course the original also includes bacon and you can’t go wrong adding chocolate! I don’t always add the chocolate but some mornings call for a little chocolate. This is Elvis Oatmeal 2.0 because I know I already have Elvis Protein Oats posted, shocking as I can think of many other versions I made and I thought I had posted more. This version has less chocolate, doesn’t include protein powder, and I’ve added the missing ingredient bacon with coconut bacon! It give it that salty edge and just makes the combo. I’m not a fan of bacon, but if you are go ahead and use that I like my coconut bacon. Sweet and salty this is the perfect bowl to start the day out as it satisfies all my cravings. Oatmeal is like a warm hug on a cold morning and this bowl is like a big bear hug! I like steel cut oats, if you like rolled oats that works too you can adapt it for whatever kind you have or like. If you batch cook you can just use your normal serving of oatmeal and heat it up. This recipe is easily adaptable as you add in peanut butter powder and then milk to reach your desired consistency as everyone, at least in our family, likes theirs a little different. Powdered peanut butter keeps the calories down and adds more protein than regular peanut butter. For those morning you still want your peanut butter I like to top or stir in a nice spoonful of my favorite peanut butter. Top with sliced banana, bacon, and optional chocolate chips and you are set, it doesn’t get much better!

Makes 1 serving
1/4c steel cut oats, 1/2c rolled oats, or 3/4c already cooked oats (used Bob’s Red Mill Steel Cut Oats)
2-3 TBSP powdered peanut butter (used Peanut Butter & Co Go Mighty Nut Original Peanut Butter Powder)
2 TBSP- 1/2c non dairy milk (used So Delicious Unsweetened Vanilla Coconut Milk)
1/2-1 banana
1-2 TBSP coconut bacon bites or bacon bites of choice (used Organic Matters Coconut Bacon)
1 TBSP mini chocolate chips or chopped chocolate, optional (used Enjoy Life Mini Chocolate Chips)
spoonful of peanut butter, optional (used Peanut Butter & Co Smooth Operator)

 

Prepare oats per package instructions, or warm already prepared oats. Stir in peanut butter powder and enough milk to reach desired consistency. Top with banana slices, chocolate chips, and coconut bacon pieces. Top with optional spoonful of peanut butter. Enjoy!
