Warning! If you “just like coffee” this drink may seriously make you cuckoo for coffee!
I know some of you are probably thinking really another coffee recipe? Than there are the coffee lovers like myself that are probably thinking is this real? Yes, the answer to both questions is yes. Yes because I am Cuckoo for coffee! Haha! Really though the creaminess of this is A-mazing!!! I just can’t explain it. So start with my cold press and coconut water I drank almost daily last summer. Than I earlier this year I found maple water, love maple water! Plus it is a great source of magnesium, and it is similar to coconut water (which you can use) but has more of a light sweet maple flavor instead of coconut flavor that pairs so well with coffee. What is even more exciting is that I could only buy small boxes as a local juice shop here or order Drink Maple online but now they sell Maple Water in a larger carton at Trader Joe’s! Pairing the maple or coconut water with cold press, you can use cold brewed coffee but I like cold press for the flavor and low acidity, is simply delicious on its own adding cinnamon, cacao, and coconut cream makes it a delicious powerhouse that can’t be touched by any coffee house concoction! Cinnamon adds a warm comforting flavor and pairs so well with cocoa and coconut and studies have shown it may lower blood sugar. I just love the extra “spice” cinnamon adds. Cacao adds a hint of chocolate, antioxidants, and vitamins and minerals like magnesium and iron. The canned coconut milk/coconut cream is just magical. Yep magical coconut cream because it not only adds healthy fats but it make this drink amazingly creamy! On a busy summer afternoon, or morning, I like to make one of these Cocoa Lattes and sit on the deck and just sip it and enjoy the warm sun on my skin and taking a moment to relax before jumping up and tending to my soccer mom duties errands!
Cuckoo for Coffee Cacao Latte
Makes 1 servings
4 oz cold press, or cold brew coffee
1/3c coconut cream, thick part from canned coconut milk/ culinary coconut milk (used So Delicious Original Culinary Coconut Milk)*
6 oz maple or coconut water
1-2 TBSP cacao powder (I use 1 tablespoon and sprinkle a little more on top)
1/2 tsp cinnamon
stevia or sweetener to taste (I use half a Stevia In The Raw packet)
*You want the thick cream part from canned coconut milk. Depending on the coconut milk using you may need to place it in the refrigerator for a few hours. I use So Delicious Original Culinary Coconut Milk I keep in the refrigerator so it is always ready but it works straight from the shelf as well.
In a Vitamix, or high-speed blender, blend coffee, maple/coconut water, cacao powder, and cinnamon until smooth. Add in coconut cream and ice and blend until smooth. Add sweetener if desired. Pour into a glass and top with a sprinkle of cocoa powder. Enjoy!
