Tomorrow is Thanksgiving and this is your PSA to make extra cranberries. Lots of extra cranberries so you can make this Cranberry Eggnog Chia Pudding Parfait! Maybe you don’t make the cranberries that’s ok, when grandma asks who wants to take leftovers because she doesn’t want them in her fridge or your mom tries to send a package of food home with it you take it, well the cranberries. Maybe a slice of pie because I like my pie the next morning with a cup of coffee, but hey that’s just me. Followed by all the oats, muesli, parfaits, and chia puddings, and everything else I can make with cranberry sauce.
We all have our Thanksgiving classics and one of mine is homemade cranberry sauce. I bring it, along with a dessert or two, to Thanksgiving every year. The last few years though my love can’t wait and I’ve been making cranberry sauce for all of November. Trying to make it a little healthier and not the spiked version always requested that I bring with. I use it in oatmeal, overnight or regular. This Cranberry Superfood Oatmeal was one of my favorites that was eaten over and over for days, ok weeks, last year. There’s a Pumpkin Brownie Cranberry Trifle, Chai Waffles, or hey even a Cranberry Pear Grilled Cheese or a Cranberry Pear Pizza! Let’s just say I won’t disclose how many pound of cranberries I buy each year. But hey they’re healthy and good for me!
Chia pudding is a quick and easy favorite that’s healthy and great for filling you up and packs fiber and lots of nutrition. Perfect for the day, or a few days, after Thanksgiving or enjoying all the treats. No judgement the day after Thanksgiving was always a holiday growing up and we had a second dinner and since my oldest daughter was born almost 14 days ago it’s own holiday. Yes when she was born it was the Saturday after Thanksgiving and I was up at the hospital in labor the day after Thanksgiving after going shopping with my mom and aunt and eating a HUGE chocolate turkey.
Ever since S was born we would head north to my parents for the annual tree lighting. She use to think the fireworks were for her birthday when she was little. Can’t blame her watching fireworks while it’s snowing is pretty magical as the fireworks reflect off the falling snow and the kids make snow angles waiting or while watching. Friends join us for the weekend up there and there is a lot of fun and food.
This year is a little different and last minute change it will be a much smaller Thanksgiving. This means 3 kinds of cranberries and about a pound per person. I’ll have lots of fun eating all those leftovers. Since the Saturday after Thanksgiving is National Parfait Day I’ll be making this Cranberry Eggnog Chia Pudding Parfait! Years ago use to be Greek yogurt parfaits.
I like to use Eggnog, a vegan Nog version, to make it simple yet full of flavor. You can use a thicker vanilla sweetened milk if desire. Simple spices like cinnamon and nutmeg make a great combo with the cranberries. Sometimes I like to add a little crunch so I go with Almond Coconut Whole Me Clusters. They’re gluten free, dairy free, veganish (made with honey) and they remind me of Christmas cookies. - 1/2-1 c cranberry sauce (homemade, see notes)
- 2 TBSP chia seeds, white chia seeds
- 1/2 c eggnog (Good Karama Nog, dairy free/vegan)
- 1/4 c Almond Coconut Whole Me Clusters or granola of choice, optional
Ingredients

- In a glass jar, or container mix chia seeds and egg nog. Cover and store in the refrigerator overnight, or for at least 4 hours.
- Stir chia pudding and layer with cranberry sauce.
- Top with optional granola or clusters.
- Enjoy!

This is genius and I can’t wait to try it! I never liked traditional egg nog, it’s so thick and weird but I do love the flavour. Dairy-free ones are lining the shelves already so I can’t wait to pick some up and make this!
