I found out the second week in March is National Chocolate Chip Cookie week. My birthday is also this week so I “had to” make a Cookie Dough Breakfast Bowl! Not knowing that right after making it I would come up with what the girls thought was “amazing” Chocolate Chip Cookie Granola, with 2 Cookie Dough versions. So back to the Cookie Dough Breakfast Bowl, I made mine with some leftover quinoa as I wanted it cold. You can customize yours and make it with hot or cold quinoa or try it with another grain of choice.  Packed with everything you need to start your day this bowl is not only delicious but nutritious. I will be making this again soon and try it with another grain and maybe warm. You can also add in your favorite protein, I like Vega Performance Protein Vanilla or Viva Vanilla Protein Smoothie in this one, and a little more milk to desired consistency to really pack a punch! Cookie Dough Breakfast Bowl

Makes 1 serving

1 c cooked cooled quinoa, or 1/4 c quinoa cook per package instructions

1/2 c cashew milk, or non dairy milk of choice (used So Delicious Cashew Milk, also have use So Delicious Unsweetened Almond Milk Plus)

1-2 TBSP cashew butter

1 medjool date, pitted

1 TBSP chia seeds

2 TBSP sweet cacao nibs, 1/4-1/3 Vega Maca Chocolate Bar chopped, or chocolate chips or chopped chocolate of choice (used 1/4 Vega Maca Chocolate Bar and a few Navitas Naturals Sweet Cacao Nibs for garnish)

 

*This is a great recipe to make ahead the night before for a quick and easy breakfast with that leftover quinoa you have from dinner.

 

In a Vitamix, blender, or small food processor blend together 1 tablespoon of cashew butter (or 2 if you don’t want any for garnish), cashew milk, date, and chia seeds and blend on low until combine. If your chia seeds end up flying scrap them down. Another option is to  mix by hand using 1 tablespoon date paste. Stir mixture in with quinoa, add cacao/chocolate and stir. Top with additional cashew butter and sprinkle of cacao/chocolate if desired. Enjoy!
