Coconut Mango Breakfast Bowl

 

Recently we have had Thai food and planned on having one of my favorite desserts, Coconut Sticky Rice with Mango, and both times I didn’t end up making it. So I decided I was going to make a version for breakfast. You can use any grain, rice, quinoa, oats, groats, I decided to use leftover freekeh. So good the next day I cooked a cup of freekeh using coconut milk for breakfast and ended up making it again, still adding in the culinary coconut milk (could also use canned, this just comes in a box and is what I prefer)! Breakfast doesn’t have to be hard. This simple, fresh, healthy breakfast bowl weather using leftovers, or making a batch of freekeh (or grain of choice) that can be used for multiple breakfasts with your choice of toppings, is a perfect quick start to the day. Making it with hearty protein and fiber packed freekeh I am sure this is much healthier than many other breakfast cereals so I think I am ok eating it for breakfast when it tastes like a delicious dessert.

 

Coconut Mango Breakfast Bowl

Makes 1 serving*

1 c cooked freekeh (used Organic Freekeh Foods Original)

1/2 a fresh mango, peel removed, sliced or diced

1 TBSP finely shredded unsweetened coconut (used Let’s Do Organic Finely Shredded Unsweetened Coconut)

1/3 c culinary or canned coconut milk light or original, shake before opening (used So Delicious Culinary Coconut Milk, Light)

sweeteners of choice to taste, optional (used a sprinkle of stevia in the raw)

 

*If making a larger batch, you can make 4 servings using 1 cup of freekeh and cook in 2 1/2 cups of coconut milk (beverage) OR use half culinary/canned coconut milk and half coconut milk (beverage). You can also cook the whole batch with coconut milk beverage and add in 1- 1 1/3 cups culinary/canned coconut milk for a rich flavor. Which can be enjoyed warm or cooled.

 

If you haven’t cooked your freekeh cook 1/4 c according to directions or batch cook more. This can be made with cold or hot freekah heat cooled freekeh if desired or use already cooked and cooled freekeh. Stir coconut milk into freekeh, add sweetener to taste if desired. Top with sliced or diced mango and shredded coconut. Enjoy!
