I wasn’t going to make Chocolate Chip Protein Balls for National Chocolate Chip Day but after my husband devoured the raw Chocolate Chip Cookie Dough Cookies I decided to whip some up instead of making another batch of the cookies. They will also make a good snack for my oldest at track in field day at school. I feel like I have been making chocolate chip cookies all week, good for me that they are healthy versions and small batches!
Chocolate Chip Cookie Protein Balls
Makes 12-15 balls
1/2 c raw cashews
1/2 c gluten free oats
2 TBSP toasted unsweetened coconut (used Let’s Do Organic Organic Shredded Coconut)
2 TBSP ground flax (optional)
1 scoop vanilla protein powder (used Vega Sport Performance Protein, Vanilla)
½ c pitted dates
1 tsp vanilla extract
2 Tbsp almond butter
¼ c water
2 TBSP chocolate chips, cacao nibs, or carob chips
In a food processor grind cashews and oats into a fine powder. Add toasted coconut, flax, and protein powder and pulse to combine. Add dates, vanilla, almond butter, and water and process until mixture comes together into a dough. Remove mixture from food processor and add chocolate. Roll into balls, I made mine pretty big and got 12. Store in the refrigerator or freezer until ready to enjoy!

My boyfriend is allergic to nuts–is there anything to substitute for the cashews, coconut, and almond butter??

I think it may be easier to search for a chickpea based recipe as that is a lot of substitutions and I am not sure how they would turn out making that many substitutions.
