Imagine chocolate chip cookies for breakfast. With these healthy Chocolate Chip Breakfast Cookies you can have cookies for breakfast! Today is National Chocolate Chip Cookie Day so I made these cookies for my family for breakfast, scoring extra brownie points for Mom Of The Year! There are two options, with or without protein powder. I made one batch without for the kids and one batch with for me so I can start my day off as “Super Mom” on the right foot as today is a very busy day and I will need all the help I can get.

These cookies are also quick and easy and make a great afternoon snack!

 

Chocolate Chip Breakfast Cookies

Makes about 12-15 cookies

2 c gluten free oats

1 small ripe banana (about 1/3 cup puree)

1/4 c non dairy milk (used Silk Unsweetened Almond Milk)

2 TBSP agave

1 tsp pure vanilla

1/2 tsp cinnamon

1/2 tsp baking soda

1/4 tsp salt

1 TBSP Flax seed *

1 scoop protein powder (used Vega One Natural)*

¼- 1/3 c chocolate chips or cacao nibs

 

*If not using protein powder for cookies add additional 1 TBSP flax seed or add 1 TBSP hemp seed. Flax seed is optional when using protein powder and cookies will be heavier and dense if both are added.

 

Preheat oven to 350. Puree banana in a food processor or blender. Add everything else except protein powder and chocolate chips in a food processor/blender, process until all ingredients are combined. If adding protein powder add and pulse until blended in. Remove from food processor and mix in chocolate chips. If using protein powder and the dough is thick I kneaded in the chopped chocolate chips. Drop, or roll, spoonfuls of dough onto cookie sheet. Bake 10 minutes. Let cool a couple of minutes and remove from baking sheet and place on cooling rack. Enjoy!
