Light and fresh these protein packed chicken salad stuffed tomatoes are a perfect lunch or light dinner.
Chicken Salad Stuffed Tomatoes
2 large organic beefsteak, or large, tomatoes
12 oz chicken breast, cooked and chopped
1 TBSP red onion, finely chopped
2-3 TBSP plain greek yogurt
Sea salt and pepper to taste
2-4 c organic baby spinach
Hallow out tomatoes by cutting out a circle around steam area and then removing insides of tomatoes. Flip tomatoes upside down to drain. Mix chicken, onion, and yogurt in a bowl. Add salt and pepper to taste. Arrange spinach on a plate. Spoon quinoa mixture into tomatoes and serve on the plates of spinach. Enjoy!
