Carrot Cake Parfait

Our family got into an interesting discussion about parfaits are made with fruit, yogurt, and granola. I decided to whip up this delicious Carrot Cake Parfait which uses carrots, yes a vegetable not a fruit! Let me tell you this is one delicious way to get some veggies in! Whip it up for breakfast, snack, or even dessert. I used my favorite coconut milk yogurt and added a little protein punch and fell in love at first bite with this one as I hope you do too!

 

Carrot Cake Parfait

Makes 1 serving

1/2c shredded carrots, packed

1 container, 6 ounces, vanilla yogurt (used So Delicious Coconut Milk Greek Style Vanilla)

2 TBSP chai protein powder (used Vega One Vanilla Chai)

2 TBSP raisins

1 TBSP chopped raw pecans

 

 

Mix 2/3 of the yogurt with chai protein powder. Place carrots in the bottom of glass or bowl. Spoon the chai yogurt mixture over top, sprinkle the raisins, top with remaining vanilla yogurt, and sprinkle with chopped pecans. Enjoy!!
