Summer might be over but I had to make one last batch of popsicles, Caramel Apple Pops, before putting the Zoku Pop Maker in the cupboard for the winter. Once again I couldn’t pick a favorite and neither could the kids so we are sharing a few of our favorite versions. For the base there is a apple puree, an apple cider, and an apple cider with apple chunks. Once you decide on your base there are two caramel recipes and you can either dip the finished popsicles in the caramel or you can add it into the popsicles. Feeling a little crazy and like your caramel apples with nuts, add some chopped nuts! I added my favorite snack lately Navitas Naturals Maca Maple Superfood Cashews!

 

Apple Puree Base
Makes 4-6 zoku popsicles
1 large apple, sliced and cored (peel optional, I leave it on)
1/4c apple cider
sprinkle of cinnamon, optional

 

In a Vitamix, or high-speed blender, blend apple, apple cider, and cinnamon together until smooth. Pour into popsicle molds, with optional caramel if desired, 7 minutes for Zoku Pop Maker or until frozen based on your popsicle mold. Remove and dip in caramel if desired and top with optional nuts. Enjoy!

Apple Cider Base
Makes 6 zoku popsicles
2c apple cider
sprinkle of cinnamon, optional
Mix apple cider with cinnamon. Pour into popsicle molds, with optional caramel if desired, 7 minutes for Zoku Pop Maker or until frozen based on your popsicle mold. Remove and dip in caramel if desired and top with optional nuts. Enjoy!

Apple Cider with Apple Chunks Base
Makes 6 zoku popsicles
1/5c apple cider
1/2 a large apple peeled, cored, and diced
sprinkle of cinnamon, optional
Mix apple cider with cinnamon. Pour into popsicle molds, add apples, and optional caramel if desired, 7 minutes for Zoku Pop Maker or until frozen based on your popsicle mold. Remove and dip in caramel if desired and top with optional nuts. Enjoy!

Caramel Sauces
You may have extra caramel sauce depending on if you are dipping or adding it to the popsicles but will have enough for at least 6-8 popsicles.

 

Easy Caramel Sauce
1/4c almond butter
1/4c raw agave
1/2 tsp vanilla
pinch of sea salt, optional
Mix ingredients together until smooth.

 

Lucuma Caramel Sauce
3/4 c raw cashew butter or raw almond butter (made with cashew butter, this version without lucuma made with almond butter)
1/3- 1/2 c raw agave (if you like things less sweet start with 1/3 cup)*
2 TBSP lucuma powder (Navitas Naturals)
1 TBSP pure vanilla
pinch of sea salt
4-7 TBSP warm water, or more if needed to make smooth*

 

*If using almond butter use the full 1/2 cup of agave.
Starting with 3 tablespoons of water and 1/3 cup of agave if you don’t like things too sweet, blend everything together in a Vitamix or high-speed blender until smooth. Test for sweetness and add more if desired. Once desired sweetness is achieved add more water if needed to make it smooth. Store in the refrigerator up to 3 weeks, it will thicken as it get cold so remove from refrigerator before using to warm up.
