Buffalo Chicken Salad Lettuce Wraps

Another one of our quick go- tos. Came up with this when I was trying to come up with a healthy game day food that my husband would eat. They are great for lunch or dinner as well for game days or parties. Another option to the lettuce wraps is to omit the celery and serve the chicken salad on celery instead of lettuce.

 

Buffalo Chicken Salad Lettuce Wraps

2 servings

12 oz chicken breast, cooked and shredded

1/3-1/2 c plain greek yogurt (like Fage 0% for cooking)

1-2 TBSP Franks Hot Sauce, depending on how hot you want it (used Franks Thick Hot Sauce)

2 ribs organic celery, thinly sliced

6-8 Organic Romaine Heart Leaves (I used mini artisan ones so about 1o-12 leaves)

 

Mix shredded chicken, yogurt, and hot sauce. I like it dry if you want to add more yogurt. Add celery and mix. Spoon chicken salad into romaine heart leaves and drizzle with additional hot sauce if desired. Enjoy!

Optional:  Add some spinach to the romaine hearts before spooning the chicken salad on them. Or add a little ranch or blue cheese crumbles.
