Whipping up another batch of protein balls and this time I was in the mood for something with blueberries!

 

Blueberry Power Balls

Makes 10-12 balls

1/2c raw almonds

1 scoop vanilla protein powder (used Vega One French Vanilla)

2 TBSP chia seeds*

1 TBSP flax

1 tsp maca powder (optional)

½ tsp lemon zest

Juice ½ a lemon

1/2c dates

2 tbsp dried blueberries

 

*If you want a little texture (version pictured) to your balls you can add half of the chia seed in with the flax and the remaining half at the end when adding the lemon juice otherwise add them all at once per instructions.

 

In a food processor grind almonds until almost flour texture. Add chia seeds, flax, and maca and process until chia seeds are ground. Add protein powder and lemon zest, pulse a couple of times to combined. Rough chop dates, or add them slowly and pulse a few times to break them up and process until you have a crumbly mixture. Pour in lemon juice and process about 30 seconds until it is mixed well. The mixture will be very crumbly but should stick together when you pinch it between your fingers. Pour mixture into a bowl. If your dried blueberries are large you can rough chop them or leave as is. Stir blueberries into the mixture. Form into balls, I made them the same size I usually make all of mine and I got 11 balls instead of my usual 12. Sometimes if I am looking to get a specific number I will press my mixture together (not too packed) and roll into a log, slice out the number I want, and then roll into balls. Enjoy! If not enjoying them right away I let them set out to “dry” for about 10 minutes before putting them in a container in the refrigerator or freezer.
