If you are a regular reader I bet your thinking, really another salad post…. Yes! I am on a mission I guess this summer to prove that salads are NOT boring. I’m not sure where I picked this up but I can’t get enough fresh produce and salads. Surprisingly most of them don’t even include leafy greens this summer and I only add my salads on top of greens to bulk them up for dinner if needed or the greens are going in my smoothies. Summertime is all about fresh whole food, smoothies and salads right? Oh and of course frozen treats! Maybe it is my subconscious hooked on smoothies and salads to balance out my ice cream and s’mores consumption this summer. Well this salad might shock you because it doesn’t have fruit like most of my recent salads and includes lettuce! That’s because this salad was made for my husband. We ate it as a family but I made it inspired by something he likes, BLTs. My oldest daughter and him both really like bacon. S even said before she wanted to be a vegan that ate bacon. This was when she was young and got it but didn’t get it and I was on a quest to find a vegan bacon she liked. I like the salty flavor of bacon but I am not a fan of it. I used vegan coconut bacon but you can use tempeh bacon or crumble any bacon you like. This easy salad is a twist on a classic BLT using jumbo tomatoes and fresh chives we got from the garden. Our romaine isn’t doing too well this year as we had a gopher that took most of our romaine plants. Apparently the vibrating stakes you put in the ground to keep them away do not work because the romaine was only feet from one of them and I could hear it so I know it was working. I wrote the recipe for one but it is easily multiplied to make for your family or would also be a great salad to serve when entertaining as it is so quick and easy to make and plates well. Yet another salad to show that salads are NOT boring and one even the manliest of men can enjoy!
BLT Salad (vegan)
Makes 1, easily multiplied for families or larger quantities
1 large tomato such as a big beef
1- 1 1/2c shredded romaine
1/2-1 TBSP mayo (used Earth Balance Vegan Mindful Mayo)
2 fresh chives, chopped
1-2 TBSP chopped crumbed bacon/bacon bits (used vegan coconut bacon)
salt and pepper to taste
In a bowl combine shredded lettuce and mayo, if you aren’t a fan of mayo start with less otherwise just to coat like I do or if you like it you can add more as I do for my husband. Slice tomato into wedges, I like to remove the stem and place upside down to cut into 8 wedges to get pretty points on my wedges. Fill tomato with shredded lettuce mixture and top with fresh chives, bacon, and salt and pepper to taste. Enjoy!
