Growing up every Earth Day I remember going to school excited as we would plant trees, flowers, or plants and we always got to bring home a little seedling to plant. I’m bummed that schools don’t do that anymore, or at least the school my girls go to doesn’t. They still do some projects with recycling and other activities that day. That doesn’t mean we can’t have our own traditions and fun. The garden isn’t usually ready to be planted but we often plant flowers or something and we always start the day with a smoothie. While we go through our smoothie phases here and will go weeks or longer having them daily for breakfast we make our Earth Day Smoothies a little more fun. One year we made a blue and green one to look like Earth. Last year we made a Eat Dirt Protein Shake. This year we decided to just make a pretty one and add some edible flowers making a fun floral Blooming Smoothie Bowl. I added a sprulina swirl to mine. Again like many of my recipes this is meant to be for inspiration. Below is the recipe combination we used but feel free to use any of my other recipes, your favorites, or play with new combinations. Customize it to your tastes, needs, and what you have on hand.

Blooming Smoothie Bowl
Makes 2 servings
Green Layer
1c water/coconut water or coconut milk (we used So Delicious Unsweetened Vanilla Coconut Milk)
2 frozen bananas
Big handful of baby spinach or greens of choice
1 scoop protein, optional (my like Vega Tropical Tango Protein Smoothie in this one)

Pink Layer
2c frozen red berries (we used strawberries and raspberries)
1c water/coconut water or coconut milk (we used So Delicious Unsweetened Vanilla Coconut Milk)
Stevia to taste, optional

Orange/Yellow Layer
2c mango and or pineapple (used a combo of both)
1c water/coconut water or orange juice (we used orange juice)

Edible flowers and or sprulina (mixed with water to make a paste) are optional.

In a Vitamix, or high-speed blender, blend together ingredients for the green layer until smooth and pour into two glasses or bowls. Rinse out blender and blend together pink layer ingredients until smooth and pour over green layer. Rinse out blender and blend together orange/yellow layer until smooth and pour over pink layer. Top with optional edible flowers and or sprulina drizzle. Enjoy!
