I set out to make a fun, healthy, patriotic treat a red, white, and blue smoothie float. It turned out more purple and pink but still very fun and delicious! Blueberry smoothie topped with sweet strawberry smoothie in itself is a delicious treat, topping that with a scoop of vanilla coconut milk ice cream makes it a special treat! We pick both strawberries and blueberries in the summer and we always pick extra to freeze. I also stock up when berries are on sale, freezing extra berries to have on hand for thick delicious smoothies and shakes.

 

Berry Smoothie Floats
Makes 2 servings
2 c coconut milk (used So Delicious Unsweetened Vanilla Coconut Milk)
1 – 1 1/2 c frozen strawberries
1/2 c frozen blueberries
sweetener of choice if desired
1/2 a pint, 1 scoop, or more if you really like ice cream (used So Delicious Vanilla Bean Coconut Milk Ice Cream)

 

In a Vitamix, or high-speed blender, blend together 1 cup of milk and blueberries until smooth, add sweetener to taste if desired. Divide between two glasses. Rinse the blender and blend together remaining milk and strawberries until smooth , add sweetener to taste if desired. Pour strawberry smoothie on top of the blueberry smoothie, if you place a spoon in the glass tilted to the outside or just above the blueberry smoothie and pour the strawberry on top it will prevent it from going into the blueberry smoothie and layer them. Top with a big scoop of ice cream and enjoy!
