Apple Pie Power Balls
(“kids” version)

I thought today would be the perfect day to post my Apple Pie Power Balls. They are also called “Soccer Balls” in our house as these are what I make the girls as a snack before soccer practice and games. I don’t always make them the same but I will share how I made them this time, and the ones that are closest to the ones I make for myself which I have also posted below.

 

Apple Pie Power Balls

(version I make for the girls)

Makes 8-12, depending on size, made 10 this time

1/2c almond meal

1/4c quinoa flakes or oats

1/4c hemp seeds

1tsp cinnamon

1TBSP lucuma powder (use Navitas Naturals Lucuma Powder)

1/3c dates, about 5 dates

1/2c chopped dried apples, unsweetened not the hard crunch but chewy

1TBSP coconut oil, melted

1TBSP applesauce, unsweetened (used our homemade applesauce)

1tsp coconut palm sugar, optional (didn’t use in this batch)

 

In a food processor pulse together almond meal, quinoa flakes/oats, hemp seeds, cinnamon, and lucuma until hemp seeds and oats/flakes are ground and you have a course powder texture. Add in apples and dates pulse, process, until they are well chopped and mixture starts to come together. Add in coconut oil and 1 tablespoon of applesauce and process and it should start to come together and the mixture should stick together when pinched between two fingers, if not add applesauce 1 tablespoon at a time, I did not have to add any extra. Taste for sweetness, and add optional palm sugar if needed, for this batch I didn’t need to but it will depend on sweetness of apples and personal preference. Form mixture into balls, I usually go for bigger then a large marble but smaller than a ping pong ball. Place in refrigerator or freezer and remove when ready to eat. Enjoy!

1 scoop natural or vanilla protein powder (used Vega One Natural, also good with Vega One French Vanilla or Vanilla Chai)

1/4c hemp seeds

1tsp cinnamon

1TBSP lucuma powder (use Navitas Naturals Lucuma Powder)

1TBSP gelatinized maca powder, optionl (used Navitas Naturals Gelatinized Maca Powder)

1/3c dates, about 5 dates

1/2c chopped dried apples, unsweetened not the hard crunch but chewy

1-2TBSP applesauce, unsweetened (used our homemade applesauce)

1tsp coconut palm sugar, optional (used, I use when I add the maca to offset it)
